Yesterday I was having one of those days where work wouldn’t stop and it seems that time was running out.
I had little time to cook, but I didn’t want to eat anything pre-frozen, I craved comfort food that was healthy and delicious.
That’s when I remembered this recipe: Couscous with chicken and peppers. Et voilà! 🤤
For the Couscous with chicken and peppers, I leave you the quantities for one person, but just adjust according to the number of hungry people! 😅

- Season the chicken strips with the garlic and lemon juice.
- In a non-stick skillet, place a drizzle of oil, along with the chicken and pepper. Add the couscous and water and add salt and saffron to your taste, until the water gets absorbed.
- I accompanied it with a salad, for a touch of freshness. Believe me, it's eating and craving for more at the same time!
